Oatmeal Muffins

 1 1/2 cup oatmeal

1 1/4 cup flour

1/2 cup brown sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

1 teaspoon cinnamon

1 cup applesauce

1/2 cup milk

3 Tablespoons oil

1 egg

Mix dry ingredients, add wet ingredients and mix. Bake at 400 degrees for 18-20 minutes.

Apple Cake

Apple Cake

Mix (dough)
2 cubes butter (softened)
1 cup sugar
1 tsp. cinnamon
1 egg
1 tsp. vanilla
1 pinch salt
2 tsp. baking powder
3 cups flour (maybe a bit less depending on moisture, dough should not be sticky, but should be able to be rolled into a ball and stay together)


Filling


1 tsp. cinnamon
1/2 c. sugar
6 to 8 granny smith apples (I like a lot of apples so I go with 8)


Divide dough into 2 pieces. Roll them between parchment (or wax) paper to fit a 9x13 inch pan. Place one rolled-out dough piece in pan, then put the apple filling on, and put the second layer of rolled-out dough on top. Bake at 400 degrees for 30 minutes on the middle rack in the oven or until the top is golden brown.

Grandma Beutler's Carrot Cookies                                               Makes 2 Dozen

Cream wet ingredients in mixer:
3/4 Cup Sugar
3/4 Cup Shortening
1 egg
1 Cup mashed cooked Carrots(I cheat and use precooked and frozen banana squash. So much faster
1 teas Vanilla
1 or 2 Tablespoons of Orange Juice(optional)

Then add dry ingredients:
2 Cups Flour
2 teas Baking Powder
1/2 teas Salt
1/2 Shredded Coconut(Optional)

Spoon batter onto greased cookie sheet and bake at 375 for 6-10 minutes, until bounces back with a finger touch and leaves no depression.  Don't over cook, if they're brown they're over done and will be dry.  

Orange Icing:
1-2 Tablespoons Orange Zest
2 Tablespoons soft Butter
1-2 Cups Powdered Sugar
1-2 Tablespoons Orange Juice 

Consistency should be slightly stiffer than icing, but not quite frosting.  Ice cookies when cooled.  I like to add some sort of candy as a topper like a jelly bean.  

Now I remember why I usually only make them in the spring.  That's when oranges are in season.  But I have used orange juice concentrate and no zest.  They weren't bad.  Once I used lemons, that'll keep you awake while driving.  Haha Happy Baking!!

Fruit Salad Topping

1 c. pineapple juice
2 T. corn starch
1/2 c. sugar
2 eggs

Whip ingredients together and then heat slowly to boiling, stirring constantly. When it's thick remove from heat and cool completely. While it is cooling whip:

1 c. whipping cream
1 t. vanilla

Mix everything together when it's cooled and pour on top of cut fruit, mix and enjoy. Add walnuts if desired!

Crazy Banana Cake with Cream Cheese Frosting (from Becky)

CRAZY BANANA CAKE WITH CREAM CHEESE ICING


The richest, moistest banana cake you'll ever make!

INGREDIENTS
  • Cake:
  • 1.5 cups very ripe bananas (3 fresh bananas or 4 thawed, previously frozen bananas)
  • 2 tsp lemon juice
  • 3 cups all-purpose flour
  • 1.5 tsp baking soda
  • ¼ tsp salt
  • ¾ cup soft butter
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1.5 cups buttermilk (OR milk soured with one tbsp vinegar or lemon juice)
  • Icing:
  • ½ cup softened butter
  • 8 oz cream cheese, room temp.
  • 1 tsp vanilla
  • 3.5 cups icing sugar (also known as powdered sugar or confectioner's sugar)
INSTRUCTIONS
  1. Pre-heat oven to 275 F, and grease and flour (or spray), a 9x13 cake pan.
  2. Mash banana and mix with lemon juice and set aside.
  3. In a med bowl, mix flour, baking soda and salt. Set aside.
  4. If you're making your own buttermilk, combine milk and vinegar (or lemon juice) in a small bowl, and set aside.
  5. In a large bowl, cream butter and sugar.
  6. Beat in eggs, one at a time. Stir in vanilla.
  7. Beat in flour mixture alternately with buttermilk.
  8. Stir in bananas.
  9. Pour into cake pan and bake 1 hour and 10 mins (or until knife comes out clean). *if need be, cook longer, checking every 10 minutes until cake is fully cooked.
  10. Immediately place in freezer for 45 minutes. (if not completely cool upon removal from freezer, let cool further before icing).
  11. Cream butter and cream cheese.
  12. Beat in vanilla and icing sugar on low until combined, then high until smooth.
  13. Frost cake and enjoy!

Peanut Butter Clusters

1/3 cup cream or milk
1/4 cup margarine
1cup sugar
Mix until soft ball stage and remove from heat
1/4 cup peanut butter
1 cup oats
1 teas vanilla
Spoon out onto wax paper lined cookie sheet

Zucchini Boats

'Tis the season for Zucchini...

Ingredients
4 Large Zucchini, cut in half lengthwise
1 1/2 cups cooked rice
16 oz ground sausage
1 tablespoon oil
1 tablespoon minced garlic
1 small onion, chopped
2 fresh chopped tomatoes or 1 can diced tomatoes
Salt and Pepper
Parmesan Cheese, mozzarella cheese, and/or bread crumbs to top

Directions
Wash Zucchini. Scoop out the inside of the Zucchini so all that is left is a thin outer shell. Grate Zucchini. Saute the onion, garlic, zucchini, and tomatoes (if fresh) in oil. Once soft add the sausage and cook until brown, drain any excess liquid. Add the rice and season to taste.  Fill the Zucchini and top with Parmesan cheese, mozzarella cheese, or bread crumbs or a combination of the three. Bake at 400* for 20 minutes.

Deb's Chocolate Chip Cookies

Cream together:
1 c Shortening
3/4 c white sugar
3/4 c brown sugar
2 eggs
1 1/2 tsp. vanilla
Then add:
1 tsp baking soda
1/2 tsp salt
2 1/4 c flour
Fold in:
2 c chocolate chips
3/4 c chopped walnuts (optional)
It says to chill for 30 minutes, but Deb doesn't do that! Place on greased cookie sheet and cook for 10-15 minutes in a 350* oven, until barely browning.

Mom's Never Fail Rolls



Ingredients:

2 tablespoons yeast
3 cups lukewarm water
½ cup sugar
1 tablespoon salt
½ cup melted butter
4 eggs
9-10 cups flour (up to 1/3 can be WW Flour)


Directions:
Mix above ingredients and let rise for 30 minutes. Divide into rolls and place on greased pan. Let rise another 30-45 minutes. Bake at 375° for 15 minutes.

Mary's 100% Whole Wheat Bread



6 cups hot water
7 cups whole wheat flour (white wheat works best)
½ cup sugar
1 ½  Tablespoons yeast
Mix and let sit for 15 minutes

Add:
2 tablespoons salt
2/3 cup shortening (or vegetable oil)

Mix and then add enough flour until it is just a little too sticky for kneading. Let rise 30-40 minutes.  Put in 4 greased loaf pans and let rise for no more than 20 minutes.
Preheat oven to 350° and bake for approx. 50 minutes.

Leon's White Bread



Ingredients:
6 cups really warm water
2 tablespoons yeast
¾ cups sugar
2 heaping cups of wheat flour and a little white flour

mix above ingredients and let soak for about 15 minutes then add
2 tabelespoons salt
2/3 cup lard
 
add white flour until dough pulls away from the sides of bowl.
Let rise for 45 minutes
Mix and put into 5 greased loaf pans
Let rise until big and fluffy (45-50 minutes)
Bake at 325° for 30 minutes
