Grandma Beutler's Carrot Cookies

3/4 Cup Sugar
3/4 Cup Shortening
1 Egg
1 Cup Cooked Mashed Carrots
1/2 Cup Coconut
2 Cups Flour
2 Teas Baking Powder
1/2 Teas Salt
1 Teas Vanilla
A couple teaspoons of orange juice if desired

Grease pan and bake @ 375 8-10 minutes til cookie bounces back in center when poked.  If they start to turn brown, they are over done and will be dry.

Orange Icing

Orange Juice
Orange Zest
Small amount of butter
Powdered Sugar
